Ingredients

  • 1 lb boneless chicken thighs or breasts, sliced thin
  • 1 cup Thai basil leaves
  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas
  • 12 fresh chilies, sliced (adjust for spice)
  • 2 tbsp cooking oil
  • Steamed jasmine rice or noodles, for serving

Instructions

  1. Prep all ingredients: Slice the chicken and chop vegetables into bite-sized pieces.
  2. Heat a large wok or skillet over high heat.
  3. Add oil and sauté the chicken until golden brown, about 3-5 minutes. Remove and set aside.
  4. Add more oil if necessary, then sauté minced garlic and ginger until fragrant, about 30 seconds.
  5. Add vegetables and stir-fry for 2-3 minutes until crisp-tender.
  6. Return chicken to the pan, add soy sauce, oyster sauce, and Thai basil. Stir to combine for about a minute.
  7. Taste and adjust seasoning; serve hot over rice or noodles.
