- 1 lb Italian sausage (bulk or sliced)
- 12 oz tortellini (fresh or frozen)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 stalks celery, chopped
- 4 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups leafy greens (spinach or kale)
- 1 tsp dried basil
- 1 tsp dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Heat a large pot or Dutch oven over medium heat. Add the sausage and cook until browned, breaking it up with a spoon. Save time and flavor by not rushing this step!
- Stir in the onions, garlic, and celery. Sauté for about 5 minutes until softened and aromatic.
- Pour in the chicken broth and diced tomatoes with their juices, stirring and scraping any bits stuck to the bottom of the pot.
- Bring the soup to a gentle boil. Add the tortellini and simmer according to the package instructions until al dente, about 3 to 5 minutes.
- Once the tortellini are cooked, mix in the spinach or kale and let it wilt. Add fresh herbs, along with salt and pepper to taste.
- Ladle the soup into bowls and serve hot, garnished with grated Parmesan cheese and a sprinkle of fresh herbs.
Notes
Feel free to mix and match ingredients based on availability. You can use turkey sausage for a lighter option or swap tortellini for lentils or chickpeas for a gluten-free version.
