Ingredients

  • 2 medium potatoes, diced
  • 2 carrots, sliced
  • 1 cup fresh dill, chopped
  • 1 medium onion, chopped
  • 1 cup sour cream
  • 1 tablespoon butter
  • 3 cloves garlic, minced

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and minced garlic; sauté until soft and translucent.
  2. Add the diced potatoes and sliced carrots, stirring for a few minutes to meld the flavors.
  3. Pour in the broth and bring to a gentle boil. Reduce heat and let simmer for about 20 minutes until the vegetables are tender.
  4. Stir in the chopped dill, reserving a bit for garnish.
  5. At the end of cooking, turn off the heat and stir in the sour cream until well combined. Adjust seasoning with salt and pepper.
  6. Ladle into bowls, garnish with extra dill, and serve warm. Optionally, add a drizzle of olive oil or paprika for garnish.
