A comforting soup made with rich tomatoes, nutty Parmesan cheese, and tender tortellini, perfect for chilly evenings.
Ingredients
- Fresh or frozen cheese tortellini
- Canned whole peeled or crushed tomatoes
- Freshly grated Parmesan cheese
- Vegetable or chicken broth
- Fresh minced garlic
- Finely chopped yellow or white onion
- Fresh basil
- Fresh thyme
- Olive oil or butter
- Salt and pepper to taste
Instructions
- Heat 2 tablespoons of olive oil or butter in a large pot over medium heat. Add finely chopped onions and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional minute, stirring frequently.
- Add the canned tomatoes along with their juice, crushing whole tomatoes if using. Stir in salt and pepper, then simmer for 5 minutes.
- Pour in your broth and add basil and thyme. Bring the soup to a gentle boil, then reduce to a simmer for about 15 minutes.
- Add tortellini, cooking according to package instructions, usually 4 to 6 minutes.
- Before serving, stir in a generous handful of freshly grated Parmesan cheese until melted. Taste and adjust seasoning if necessary.
- Ladle the soup into warm bowls, garnishing with extra Parmesan and fresh basil.
Notes
Taste as you go, and don’t hesitate to add red pepper flakes for heat or extra virgin olive oil for richness.
