  • 1 lb fresh green beans, trimmed
  • 23 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh thyme or rosemary

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots if necessary, then cut them into uniform-sized pieces.
  3. Trim the ends of the green beans as needed.
  4. In a large bowl, combine the carrots and green beans. Drizzle with olive oil, add the minced garlic, and sprinkle with salt, pepper, and herbs. Toss until well coated.
  5. Spread the vegetables in a single layer on a baking sheet, avoiding overcrowding.
