- 1 lb carrots, cut into 1–2 inch pieces
- 1 lb fresh green beans, trimmed
- 2–3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- Fresh thyme or rosemary
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots if necessary, then cut them into uniform-sized pieces.
- Trim the ends of the green beans as needed.
- In a large bowl, combine the carrots and green beans. Drizzle with olive oil, add the minced garlic, and sprinkle with salt, pepper, and herbs. Toss until well coated.
- Spread the vegetables in a single layer on a baking sheet, avoiding overcrowding.
- Roast for 20-25 minutes, stirring halfway through, until golden and crispy.
- Serve warm and enjoy!
