- 1 cup mushrooms (cremini and shiitake recommended)

- 1 shallot, sliced
- 2 cups spinach or kale
- 1 cup coconut cream or cashew cream
- 2 cups vegetable broth
- 1 lemon, juiced
- Fresh basil and parsley, chopped
- Red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Prepare the ingredients by rinsing the orzo and chopping the mushrooms, garlic, shallots, and greens.
- Sauté the garlic and shallots in a skillet with olive oil over medium heat until translucent.
- Add the mushrooms and a pinch of salt, sautéing until golden brown.
- Pour in the uncooked orzo and vegetable broth, bringing to a gentle simmer.
- Cover and cook for 10-15 minutes until the orzo absorbs the broth.
- Stir in the spinach or kale to wilt, then mix in the coconut or cashew cream.
- Finish with lemon juice and sprinkle with fresh herbs.
- Serve warm, garnished with parsley and red pepper flakes if desired.
