Ingredients

  • 1 cup orzo pasta
  • 1 cup mushrooms (cremini and shiitake recommended)
  • 2 cloves garlic, minced
  • 1 shallot, sliced
  • 2 cups spinach or kale
  • 1 cup coconut cream or cashew cream
  • 2 cups vegetable broth
  • 1 lemon, juiced
  • Fresh basil and parsley, chopped
  • Red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by rinsing the orzo and chopping the mushrooms, garlic, shallots, and greens.
  2. Sauté the garlic and shallots in a skillet with olive oil over medium heat until translucent.
  3. Add the mushrooms and a pinch of salt, sautéing until golden brown.
  4. Pour in the uncooked orzo and vegetable broth, bringing to a gentle simmer.
  5. Cover and cook for 10-15 minutes until the orzo absorbs the broth.
  6. Stir in the spinach or kale to wilt, then mix in the coconut or cashew cream.
  7. Finish with lemon juice and sprinkle with fresh herbs.
  8. Serve warm, garnished with parsley and red pepper flakes if desired.
