Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until creamy and light.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Divide the dough into two disks, wrap them in plastic wrap, and chill for at least one hour.
  7. On a floured surface, roll out one disk of dough to about ¼ inch thickness and cut out shapes with cookie cutters.
  8. Transfer the cookies to the prepared baking sheets.
  9. Bake for 8-10 minutes until the edges are lightly golden.
  10. Let cool on the baking sheet for a few minutes, then transfer to wire racks to cool completely.
