- 1 lb beef (sirloin or fillet)
- 8 oz mushrooms (cremini or button)
- 1 onion (sweet)
- 2 cloves garlic (minced)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 cup heavy cream
- 1 cup beef broth
- 1 tbsp Dijon mustard
- Salt and pepper (to taste)
- 2 tbsp fresh parsley (chopped, for garnish)
Instructions
- Prepare the ingredients: Thinly slice the beef against the grain. Clean and slice the mushrooms, chop the onion, and mince the garlic.
- Sauté the mushrooms: In a large skillet, heat olive oil and butter over medium-high heat. Add mushrooms and sauté until golden brown, then set aside.
- Cook the beef: In the same skillet, add more butter if needed. Season beef with salt and pepper, and cook in batches until browned. Set aside.
- Build the sauce: In the same pan, add onion and sauté until translucent, then add garlic and cook for an additional minute. Stir in Dijon mustard and return mushrooms to the pan.
- Combine the elements: Pour in beef broth, deglazing the pan. Once reduced, lower the heat and stir in heavy cream. Simmer until slightly thickened.
- Finish with beef: Add beef back into the pan, gently mixing to coat in the creamy sauce. Adjust seasoning as necessary.
- Garnish and serve: Serve over egg noodles or rice and finish with fresh parsley.

Ensure not to overcrowd the pan to achieve a nice sear on the beef. Adjust seasoning and ingredients to suit dietary preferences.
