- 1/2 cup unsulfured molasses
- 1/2 cup softened butter (or coconut oil)
- 3/4 cup brown sugar
- 1 tsp baking soda

- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1 large egg (or flaxseed mixture)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat together softened butter and brown sugar until creamy (about 2-3 minutes).
- Add molasses and egg (or flaxseed mixture) to the mixture, blending until fully combined.
- In another bowl, mix rolled oats, flour, baking soda, and spices together.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Use a tablespoon to drop dough by rounded spoonfuls onto a lined baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to wire rack to cool completely.
Notes
For enhanced flavor, chill the dough for a few hours before baking.
