Description

Deliciously spiced Gingerbread Oatmeal Cookies, perfect for holiday gatherings and family memories.


Ingredients

  • 1 cup all-purpose flour (or whole wheat flour)
  • 1/2 cup unsulfured molasses
  • 1/2 cup softened butter (or coconut oil)
  • 3/4 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 large egg (or flaxseed mixture)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat together softened butter and brown sugar until creamy (about 2-3 minutes).
  3. Add molasses and egg (or flaxseed mixture) to the mixture, blending until fully combined.
  4. In another bowl, mix rolled oats, flour, baking soda, and spices together.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Use a tablespoon to drop dough by rounded spoonfuls onto a lined baking sheet.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Let cool on the baking sheet for 5 minutes before transferring to wire rack to cool completely.

Notes

For enhanced flavor, chill the dough for a few hours before baking.
