Description

Delightful and nostalgic Eggnog Cookies, soft and chewy, perfect for holiday gatherings.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 2 cups eggnog
  • 1 tablespoon vanilla extract
  • 2½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat together the butter, granulated sugar, and brown sugar until fluffy, about 3-5 minutes.
  3. Add the eggnog and vanilla extract; stir until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, nutmeg, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients; mix until just combined.
  6. Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Avoid overbaking for the perfect soft texture. Consider creating an ‘Eggnog Cookie Bar’ for festive gatherings.
