Ingredients

- 1 chuck roast
- 4 yellow onions, finely sliced
- 2 cups beef broth
- 4 cloves garlic, minced
- 8 oz cremini or shiitake mushrooms, sliced
- 2 tablespoons fresh thyme
- 2 tablespoons fresh rosemary
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt, to taste
- Pepper, to taste
Instructions
- In a large skillet, melt 1 tablespoon of butter with a drizzle of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly for 30-40 minutes, stirring occasionally until they are golden brown and caramelized.
- Season the chuck roast generously with salt and pepper. In a large pot, heat another tablespoon of olive oil over medium-high heat. Sear the roast on all sides for 3-4 minutes until it develops a brown crust.
- Remove the roast and set aside. In the same pot, add caramelized onions, minced garlic, and mushrooms. Cook until the mushrooms are tender. Deglaze the pot with 1 cup of beef broth, scraping up any bits stuck at the bottom.
- Return the roast to the pot. Add remaining beef broth and fresh herbs. Cover and simmer on low heat for 3-4 hours or until the roast is fork-tender.
- Let the roast rest for 10 minutes before slicing. Serve with sides like mashed potatoes or crusty bread.
Notes
This dish pairs well with creamy mashed potatoes or roasted vegetables. If you have leftovers, they make great sandwiches!
