Instructions
- Rinse quinoa under running water and combine with water or broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Let sit for 5 minutes and fluff with a fork.
- While quinoa cooks, prepare the corn, bell peppers, and red onion.
- In a large bowl, combine cooked quinoa, corn, black beans, bell peppers, and red onion.
- Whisk together olive oil, lime juice, salt, and pepper; add cumin or paprika if desired.
- Pour the dressing over the salad mixture, toss gently, and add chopped herbs.
- Let the salad sit for 30 minutes before serving.
