- 1 cup shredded cheddar cheese
- 4 oz cream cheese
- 2 medium Yukon gold potatoes, diced
- 1 cup diced bell peppers
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley or green onions for garnish
Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Add diced onions and bell peppers; sauté until they soften, about 4-5 minutes. Add minced garlic and cook for an extra minute until fragrant.
- Push the vegetables to one side of the pan and add the ground beef. Cook until browned, using a wooden spoon to break it up into smaller pieces. Season with salt and pepper to taste.
- Once the meat is browned, pour in the broth and bring it to a gentle simmer. Add diced potatoes and allow them to cook until tender, about 10-15 minutes. Stir occasionally.
- Reduce the heat, then mix in the cream cheese until fully melted and incorporated. Sprinkle in the shredded cheese, stirring until nice and gooey. Adjust seasoning as needed.
- Ladle the soup into bowls and garnish with fresh parsley or green onions if desired. Serve with crusty bread or a side salad.
Notes
Substitutions can be made for ground turkey or plant-based crumbles. Use low-sodium broth for healthier options.
