Description

A comforting one-pot meal featuring earthy mushrooms, buttery rice, and aromatic herbs, perfect for family gatherings or weeknight dinners.


Ingredients

  • 2 cups long-grain rice (Basmati or jasmine)
  • 1 lb mixed mushrooms (button, cremini, shiitake)
  • 1 large onion, finely chopped
  • 34 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 tbsp olive oil or butter
  • 1 tsp fresh thyme
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add onions and garlic, sauté until soft, about 3-4 minutes.
  2. Add sliced mushrooms and cook until softened, about 5-7 minutes.
  3. Stir in the rice and toast lightly for about 2 minutes.
  4. Pour in the broth, scraping brown bits from the bottom.
  5. Add salt, pepper, and herbs. Bring to a simmer, cover, and cook on low for 18-20 minutes.
  6. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and serve warm.

Notes

For added flavor, allow the mushrooms to brown well. Let the finished dish rest for enhanced flavor.
