Ingredients

- 2 cups long-grain rice (Basmati or jasmine)
- 1 lb mixed mushrooms (button, cremini, shiitake)
- 1 large onion, finely chopped
- 3–4 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 tbsp olive oil or butter
- 1 tsp fresh thyme
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add onions and garlic, sauté until soft, about 3-4 minutes.
- Add sliced mushrooms and cook until softened, about 5-7 minutes.
- Stir in the rice and toast lightly for about 2 minutes.
- Pour in the broth, scraping brown bits from the bottom.
- Add salt, pepper, and herbs. Bring to a simmer, cover, and cook on low for 18-20 minutes.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork and serve warm.
Notes
For added flavor, allow the mushrooms to brown well. Let the finished dish rest for enhanced flavor.
