Description

A delightful blend of traditional macaroni and cheese with zesty taco flavors, perfect for family gatherings.

Ingredients

Scale
  • 8 ounces elbow macaroni
  • 2 cups sharp and mild cheddar cheese, shredded
  • 4 ounces cream cheese
  • 1 packet taco seasoning
  • 1 cup whole milk or heavy cream
  • 1 pound ground beef or turkey (optional for protein)
  • 1 cup sautéed onions and bell peppers (optional)

Instructions

  1. Cook the Pasta: Boil the macaroni according to package instructions, then drain and set aside.
  2. Sauté the Meat and Veggies: In a skillet, cook your choice of ground meat over medium heat until browned and add diced onions and bell peppers until softened.
  3. Make the Cheese Sauce: Lower the heat, stir in the cream cheese until melted, followed by milk. Gradually mix in the cheese until melted.
  4. Season with Taco Flavors: Stir in taco seasoning and mix well, adjusting seasoning to taste.
  5. Combine: Toss cooked pasta into the cheese sauce until evenly coated.
  6. Serve and Enjoy: Top with extra cheese and optional toppings like cilantro or diced tomatoes.

Notes

For added texture, broil for a couple of minutes after sprinkling cheese on top to create a golden crust.
