Ingredients

  • Pasta (fettuccine or tagliatelle)
  • Leeks
  • Mushrooms (cremini and shiitake)
  • Gruyere cheese
  • Butter or olive oil
  • Garlic
  • Fresh thyme or parsley

Instructions

  1. Prepare the ingredients: clean leeks and mushrooms, slice leeks thinly, chop mushrooms, and grate Gruyere cheese.
  2. Heat a large skillet over medium heat and add butter or olive oil. Sauté the leeks until golden, about 15-20 minutes.
  3. Add mushrooms to the pan and cook until tender, then add minced garlic in the last few minutes.
  4. Boil salted water and cook pasta according to package instructions, reserving a cup of pasta water.
  5. Add drained pasta to the skillet, along with reserved pasta water and grated Gruyere. Stir to combine until creamy.
  6. Season with salt, pepper, and fresh herbs to taste.
