Ingredients
- Pasta (fettuccine or tagliatelle)
- Leeks
- Mushrooms (cremini and shiitake)
- Gruyere cheese
- Butter or olive oil

- Fresh thyme or parsley
Instructions
- Prepare the ingredients: clean leeks and mushrooms, slice leeks thinly, chop mushrooms, and grate Gruyere cheese.
- Heat a large skillet over medium heat and add butter or olive oil. Sauté the leeks until golden, about 15-20 minutes.
- Add mushrooms to the pan and cook until tender, then add minced garlic in the last few minutes.
- Boil salted water and cook pasta according to package instructions, reserving a cup of pasta water.
- Add drained pasta to the skillet, along with reserved pasta water and grated Gruyere. Stir to combine until creamy.
- Season with salt, pepper, and fresh herbs to taste.
- Serve with additional cheese and herbs on top. Enjoy!
