Ingredients

  • 1 shallot, chopped
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup baby carrots
  • 1 teaspoon dried basil or thyme
  • Salt and pepper to taste

Instructions

  1. Prepare the Marinade: In a bowl, mix together balsamic vinegar, olive oil, minced garlic, dried herbs, salt, and pepper.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, coating well. Let it rest for at least 30 minutes, or up to 4 hours in the fridge.
  3. Preheat Your Oven and Prepare Your Pan: Preheat the oven to 400°F (200°C). Drizzle a large oven-safe skillet with olive oil.
  4. Sear the Chicken: Heat the skillet over medium-high heat. Add the marinated chicken and cook for 3-4 minutes on each side until golden brown.
  5. Add the Vegetables: Toss the chopped vegetables around the chicken in the skillet.
