- 1 teaspoon dried basil or thyme

Instructions
- Prepare the Marinade: In a bowl, mix together balsamic vinegar, olive oil, minced garlic, dried herbs, salt, and pepper.
- Marinate the Chicken: Add the chicken pieces to the marinade, coating well. Let it rest for at least 30 minutes, or up to 4 hours in the fridge.
- Preheat Your Oven and Prepare Your Pan: Preheat the oven to 400°F (200°C). Drizzle a large oven-safe skillet with olive oil.
- Sear the Chicken: Heat the skillet over medium-high heat. Add the marinated chicken and cook for 3-4 minutes on each side until golden brown.
- Add the Vegetables: Toss the chopped vegetables around the chicken in the skillet.
- Roast in the Oven: Transfer the skillet to the oven and roast for 25-30 minutes, or until the chicken is fully cooked (165°F/75°C).
- Serve and Enjoy: Let it rest for a few minutes before serving hot from the pan.
