Description

A cozy and nourishing one-pot Cowboy Soup filled with hearty ingredients, perfect for chilly days and shared memories.


Ingredients

  • 1 lb ground beef or turkey
  • 8 oz fresh mushrooms (cremini and button)
  • 1 sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced or crushed tomatoes
  • 1 can (15 oz) kidney or black beans, drained
  • 4 cups beef or vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prepare your ingredients: Chop onions and garlic finely. Slice mushrooms, and have beans and tomatoes ready.
  2. Sauté the aromatics: In a large pot over medium-high heat, add oil. Once hot, cook onions and garlic until translucent (3-4 minutes).
  3. Brown the meat: Add ground meat, breaking it apart, and cook until browned. Drain excess fat if necessary.
  4. Add vegetables: Stir in sliced mushrooms and cook until tender (approximately 5 minutes).
  5. Incorporate tomatoes and beans: Stir in canned tomatoes and drained beans.
  6. Pour in broth: Add broth and let it simmer on low heat for at least 20 minutes.
  7. Season: Add chili powder, cumin, salt, and pepper to taste.
  8. Finish with herbs: Stir in fresh chopped herbs just before serving.
  9. Serve and enjoy: Ladle the soup into bowls and serve with crusty bread or cornbread.

Notes

Feel free to customize by adding chicken or swapping in seasonal veggies. Adjust thresholds for thickness by adding more broth or water.
