Ingredients

  • 1 teaspoon baking powder

  • 1 large egg
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together granulated sugar, brown sugar, and egg. Add buttermilk, vegetable oil, and vanilla extract and mix until smooth.
  4. Gradually combine the dry ingredients into the wet mixture until just combined.
  5. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes.
  6. Line a baking sheet with parchment paper. Scoop tablespoon-sized balls of dough and roll in powdered sugar to coat.
  7. Place the cookie dough balls about two inches apart on the baking sheet and bake for 10-12 minutes.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
