Ingredients

  • 8 oz dark chocolate
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour cake pans.
  2. Melting dark chocolate with butter over a double boiler or microwave. Stir until smooth and remove from heat.
  3. Whisk in sugar, eggs, and vanilla until well combined.
  4. Gently fold in flour until no streaks remain.
  5. Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Let cool.
  6. Whip heavy cream into soft peaks. Mash raspberries with some sugar and fold into the whipped cream, then mix in melted chocolate.
  7. Layer one cake on a serving plate, spread mousse on top, and place the second cake layer on top. Cover top and sides with more mousse.
  8. Chill in the fridge for at least 2 hours to set. Serve with extra raspberries and whipped cream.
