- 8 oz dark chocolate
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 1 cup fresh raspberries
Instructions
- Preheat oven to 350°F (175°C). Grease and flour cake pans.
- Melting dark chocolate with butter over a double boiler or microwave. Stir until smooth and remove from heat.
- Whisk in sugar, eggs, and vanilla until well combined.
- Gently fold in flour until no streaks remain.
- Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Let cool.
- Whip heavy cream into soft peaks. Mash raspberries with some sugar and fold into the whipped cream, then mix in melted chocolate.
- Layer one cake on a serving plate, spread mousse on top, and place the second cake layer on top. Cover top and sides with more mousse.
- Chill in the fridge for at least 2 hours to set. Serve with extra raspberries and whipped cream.

Ensure all ingredients are at room temperature before starting for best results. Avoid over-whipping cream to maintain its airy texture.
