- 1 cup granulated sugar
- ½ cup brown sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 cup chopped almonds
- 1 cup chopped maraschino cherries
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs, one at a time, mixing thoroughly after each.
- Stir in vanilla and almond extracts.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients and mix until combined.
- Gently fold in chopped almonds and cherries.
- Drop rounded balls of dough onto a prepared baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are light golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a special touch, drizzle melted white chocolate over cooled cookies or sprinkle sea salt on top before baking.
