Description

Ingredients

  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup chopped almonds
  • 1 cup chopped maraschino cherries
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon baking soda
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs, one at a time, mixing thoroughly after each.
  4. Stir in vanilla and almond extracts.
  5. In another bowl, whisk together flour, baking soda, and salt.
  6. Gradually add the dry mixture to the wet ingredients and mix until combined.
  7. Gently fold in chopped almonds and cherries.
  8. Drop rounded balls of dough onto a prepared baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until edges are light golden brown.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a special touch, drizzle melted white chocolate over cooled cookies or sprinkle sea salt on top before baking.
