Description

Ingredients

  • 6 oz high-quality semi-sweet or dark chocolate
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 425°F (220°C). Grease ramekins or muffin tins with butter and dust with flour.
  2. Melt chocolate and butter together in a heatproof bowl over a double boiler or in the microwave, stirring until smooth.
  3. Whisk together eggs, egg yolks, and sugar in a separate bowl until pale and slightly frothy.
  4. Fold the melted chocolate mixture into the egg mixture gently.
  5. Sift in flour and fold carefully until just combined.
  6. Divide the batter among the prepared ramekins, filling each three-quarters full.
  7. Bake for 12-14 minutes, until edges are firm and the center remains soft.
  8. Let the cakes sit for 1 minute before inverting onto plates. Serve warm with powdered sugar or ice cream.

Notes

Ensure to underbake slightly for a perfectly gooey center. Serve with vanilla ice cream or fresh berries.
