- 6 oz high-quality semi-sweet or dark chocolate
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1/4 cup all-purpose flour
- 1 tsp vanilla extract
Instructions
- Preheat oven to 425°F (220°C). Grease ramekins or muffin tins with butter and dust with flour.
- Melt chocolate and butter together in a heatproof bowl over a double boiler or in the microwave, stirring until smooth.
- Whisk together eggs, egg yolks, and sugar in a separate bowl until pale and slightly frothy.
- Fold the melted chocolate mixture into the egg mixture gently.
- Sift in flour and fold carefully until just combined.
- Divide the batter among the prepared ramekins, filling each three-quarters full.
- Bake for 12-14 minutes, until edges are firm and the center remains soft.
- Let the cakes sit for 1 minute before inverting onto plates. Serve warm with powdered sugar or ice cream.
Notes
Ensure to underbake slightly for a perfectly gooey center. Serve with vanilla ice cream or fresh berries.
