- 2 lbs boneless chicken (breast or thighs)
- 1 cup heavy cream or coconut milk
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, finely diced
- 4 cups chicken or vegetable broth
- 2 cups fresh mushrooms (baby Bella or cremini)
- 1 cup cream cheese
- 1 tsp fresh thyme, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping the onion, garlic, and vegetables uniformly.
- Optionally, sear the chicken in a skillet for a few minutes to enhance flavor.
- Combine all ingredients in the crockpot, starting with the chicken, garlic, onion, mushrooms, broth, and vegetables. Add cream cheese and seasonings.
- Cook on low for 6-8 hours or high for 4-5 hours without lifting the lid.
- Shred the chicken in the pot with two forks once cooked.
- Stir in freshly chopped herbs just before serving.
- Taste and adjust seasoning as necessary before serving.
Notes
Serve with crusty bread or flaky biscuits for dipping. This soup freezes well for up to three months.
