- 1/4 cup fresh parsley, chopped

Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions and minced garlic, stirring until the onions turn tender and translucent.
- Toss in the diced chicken and sauté until browned on the outside but not fully cooked through. Add the chopped carrots and celery, stirring to coat in the fragrant oils.
- Add the chicken broth to the pot and bring it to a gentle simmer, cooking until the chicken is fully cooked (about 15-20 minutes).
- Stir in the Greek yogurt or heavy cream, allowing the soup to thicken and become creamy.
- Mix in lemon juice, zest, fresh herbs, and season with salt and pepper to taste.
- Serve in bowls, garnished with extra dill or parsley, and enjoy with warm bread or salad.
Notes
For extra flavor, consider adding a dash of white wine after browning the chicken. Substitute dried herbs for fresh if needed.
