- 2 1/4 cups all-purpose flour
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup molasses
- 1 tsp baking soda
- 1 large egg
- 1 tbsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp freshly grated nutmeg
- 1/4 tsp salt
- 1 tsp vanilla extract
- Sugar for rolling (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat together the softened butter and brown sugar until fluffy.
- Add molasses and the egg, mixing until well combined.
- In another bowl, whisk together the flour, spices, baking soda, and salt before slowly adding it to the wet mixture until a dough forms.
- Chill the dough for about 30 minutes.
- Scoop tablespoon-sized balls of dough, roll them smooth, and optionally coat in granulated sugar.
- Place on a baking sheet lined with parchment paper and bake for about 10-12 minutes.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a dairy-free version, use coconut oil or vegan butter. These cookies freeze beautifully for several months.
