Description

Delightfully soft and chewy gingerbread cookies infused with rich spices and molasses, perfect for holiday gatherings.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 tsp baking soda
  • 1 large egg
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp freshly grated nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Sugar for rolling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the softened butter and brown sugar until fluffy.
  3. Add molasses and the egg, mixing until well combined.
  4. In another bowl, whisk together the flour, spices, baking soda, and salt before slowly adding it to the wet mixture until a dough forms.
  5. Chill the dough for about 30 minutes.
  6. Scoop tablespoon-sized balls of dough, roll them smooth, and optionally coat in granulated sugar.
  7. Place on a baking sheet lined with parchment paper and bake for about 10-12 minutes.
  8. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a dairy-free version, use coconut oil or vegan butter. These cookies freeze beautifully for several months.
