- 1 box Red Velvet Cake Mix
- 2 large Eggs
- 1/2 cup Vegetable or Canola Oil
- 1 cup White Chocolate Chips (optional)
- Cream Cheese Frosting (optional, for drizzling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine red velvet cake mix, eggs, and oil, stirring until a soft dough forms.
- If using, gently fold in white chocolate chips and any other mix-ins.
- Use a cookie scoop to drop rounded amounts of dough onto the prepared baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes, or until edges are firm and tops are set.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
- If desired, drizzle or spread cream cheese frosting on cooled cookies.
Notes
Don’t overbake the cookies; they will firm up as they cool. You can freeze cookie dough for later baking.
