Description

A comforting and hearty pot roast made in a slow cooker, perfect for family gatherings and cold evenings.


Ingredients

  • 34 lbs chuck roast
  • 2 onions, diced
  • 4 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, quartered
  • 4 cups beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 cup red wine (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables: Start by dicing the onions, slicing the carrots, and quartering the potatoes.
  2. Sear the Meat (optional): While the slow cooker is warming, sear the chuck roast in a skillet over medium heat for about 4-5 minutes on each side.
  3. Layer the Ingredients: Place the sautéed onions at the bottom of the slow cooker, add the seared meat, followed by garlic, carrots, potatoes, and herbs.
  4. Add Liquids: Pour in the beef broth and red wine, and sprinkle salt and pepper for seasoning.
  5. Set the Slow Cooker: Cover and cook on low for 8 to 10 hours or on high for about 4 to 5 hours.
  6. Check for Tenderness: About an hour before it’s done, check the tenderness of the meat. It should shred easily.
  7. Serve and Enjoy: Let it sit for about 20 minutes before serving, then slice or shred and enjoy the meal.

Notes

For best results, let the roast rest before slicing to enhance juiciness. A good sauce can be made from the remaining broth by reducing it on the stove.
