Ingredients

- 3–4 lbs chuck roast
- 2 onions, diced
- 4 cloves garlic, minced
- 3 carrots, sliced
- 3 potatoes, quartered
- 4 cups beef broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 cup red wine (optional)
- Salt and pepper to taste
Instructions
- Prepare the Vegetables: Start by dicing the onions, slicing the carrots, and quartering the potatoes.
- Sear the Meat (optional): While the slow cooker is warming, sear the chuck roast in a skillet over medium heat for about 4-5 minutes on each side.
- Layer the Ingredients: Place the sautéed onions at the bottom of the slow cooker, add the seared meat, followed by garlic, carrots, potatoes, and herbs.
- Add Liquids: Pour in the beef broth and red wine, and sprinkle salt and pepper for seasoning.
- Set the Slow Cooker: Cover and cook on low for 8 to 10 hours or on high for about 4 to 5 hours.
- Check for Tenderness: About an hour before it’s done, check the tenderness of the meat. It should shred easily.
- Serve and Enjoy: Let it sit for about 20 minutes before serving, then slice or shred and enjoy the meal.
Notes
For best results, let the roast rest before slicing to enhance juiciness. A good sauce can be made from the remaining broth by reducing it on the stove.
