Description

A refreshing salad combining sweet strawberries, tart pomegranate seeds, and creamy feta dressed with balsamic vinaigrette.


Ingredients

  • 2 cups fresh strawberries, hulled and quartered
  • 1 cup pomegranate seeds
  • 1/2 cup goat cheese or feta, crumbled
  • 4 cups mixed salad greens (arugula, spinach, romaine)
  • 1/2 cup walnuts or pecans, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse and dry the salad greens thoroughly.
  2. Slice the strawberries into quarters and set aside.
  3. Cut the pomegranate in half and gently tap the back to release the seeds.
  4. In a large bowl, combine the salad greens, sliced strawberries, pomegranate seeds, and crumbled cheese.
  5. Whisk together olive oil and balsamic vinegar, adding a pinch of salt and pepper to taste.
  6. Just before serving, drizzle the dressing over the salad and toss gently.

Best served chilled and dressed right before serving to maintain freshness.
