Ingredients

- 2 cups fresh strawberries, hulled and quartered
- 1 cup pomegranate seeds
- 1/2 cup goat cheese or feta, crumbled
- 4 cups mixed salad greens (arugula, spinach, romaine)
- 1/2 cup walnuts or pecans, chopped
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Rinse and dry the salad greens thoroughly.
- Slice the strawberries into quarters and set aside.
- Cut the pomegranate in half and gently tap the back to release the seeds.
- In a large bowl, combine the salad greens, sliced strawberries, pomegranate seeds, and crumbled cheese.
- Whisk together olive oil and balsamic vinegar, adding a pinch of salt and pepper to taste.
- Just before serving, drizzle the dressing over the salad and toss gently.
