Description

A comforting dish featuring roasted butternut squash and savory ground turkey, perfect for family gatherings and cozy meals.

Ingredients

Scale
  • 1 large butternut squash, cubed
  • 1 lb ground turkey
  • 3 cloves garlic, minced
  • 1 red onion, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Fresh herbs (like thyme or sage), to taste
  • Optional vegetables (bell peppers, carrots, spinach)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the butternut squash into 1-inch cubes.
  3. In a bowl, combine squash, olive oil, garlic, onion, and spices; toss to coat.
  4. Spread on a baking sheet and roast for 25-30 minutes until tender and caramelized, stirring halfway.
  5. In a skillet, heat oil over medium heat; add ground turkey and season. Cook until browned, about 7-10 minutes.
  6. Mix roasted squash with the turkey in the skillet. Adjust seasoning and serve warm.

Notes

Use fresh ingredients for the best flavor. Don’t skip on seasoning, and keep an eye on the roasting to avoid overcooking the squash.
