- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tbsp red food coloring
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 2 tbsp heavy cream or milk
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Make the cheesecake filling by blending softened cream cheese and powdered sugar until smooth. Add vanilla extract and heavy cream, mixing until creamy. Chill filling.
- To make the cookie dough, cream softened butter with granulated and brown sugar until fluffy. Add eggs one by one, blending well. Stir in vanilla and red food coloring.
- Combine dry ingredients in another bowl. Gradually mix this into the creamed mixture until a smooth dough forms.
- For each cookie, scoop a tablespoon of dough, flatten it, and place about a teaspoon of cheesecake filling in the center. Encase the filling with dough and roll it into a ball.
- Place cookie balls on prepared sheets, spacing them 2 inches apart, and bake for 10-12 minutes until edges are set and centers are slightly soft.
- Cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
Chill the cheesecake filling before using it to maintain its shape during baking. Use a cookie scoop for uniform sizes.
