- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 and ¾ cups all-purpose flour
- 1 teaspoon baking soda

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the granulated sugar, brown sugar, and peanut butter. Mix until smooth.
- Add the egg and stir until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mix to the wet ingredients, blending until just combined.
- Scoop tablespoon-sized portions of dough, roll them into balls, and then roll in granulated sugar. Place on the prepared baking sheet.
- Bake for 10-12 minutes until edges are lightly browned. Press a chocolate kiss into the center of each cookie while they are still warm.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
For a gluten-free option, substitute with a gluten-free flour blend. Allow cookies to cool properly to maintain their shape.
