- 1 lb ground beef
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onion and minced garlic. Sauté until translucent, about 3 minutes.
- Add the ground beef and cook until browned, breaking it up into smaller pieces. Drain any excess grease if needed.
- Pour in the broth and bring to a boil. Stir in pasta and diced tomatoes. Reduce heat, allowing it to simmer until pasta is cooked, about 8-10 minutes.
- Once the pasta is just al dente, reduce heat to low and stir in the shredded cheddar cheese until melted and creamy.
- Adjust seasoning with paprika, salt, and fresh herbs to your liking.
- Serve in bowls and garnish with extra cheese or fresh herbs if desired.
Notes
For a vegetarian version, replace ground beef with sautéed mushrooms and use vegetable broth.
