Description

A comforting soup that combines the flavors of cheeseburgers and macaroni in one pot, perfect for family gatherings and weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onion and minced garlic. Sauté until translucent, about 3 minutes.
  2. Add the ground beef and cook until browned, breaking it up into smaller pieces. Drain any excess grease if needed.
  3. Pour in the broth and bring to a boil. Stir in pasta and diced tomatoes. Reduce heat, allowing it to simmer until pasta is cooked, about 8-10 minutes.
  4. Once the pasta is just al dente, reduce heat to low and stir in the shredded cheddar cheese until melted and creamy.
  5. Adjust seasoning with paprika, salt, and fresh herbs to your liking.
  6. Serve in bowls and garnish with extra cheese or fresh herbs if desired.

Notes

For a vegetarian version, replace ground beef with sautéed mushrooms and use vegetable broth.
