Ingredients

Scale
  • 2 cups granulated sugar
  • 1/2 cup corn syrup
  • 1/2 cup water
  • 1 teaspoon peppermint extract
  • Red food coloring
  • Powdered sugar (for dusting)

Instructions

  1. Prepare your workspace: Clean your counter and dust it lightly with powdered sugar. Gather all ingredients and tools, including a candy thermometer and silicone baking mats.
  2. Combine sugar, corn syrup, and water in a medium-sized saucepan over medium heat, stirring until the sugar dissolves.
  3. Allow the mixture to boil without stirring. Attach the candy thermometer, boiling until it reads 300°F (hard crack stage).
  4. Remove from heat, stir in peppermint extract and food coloring.
  5. Cool slightly, then butter your hands and stretch the candy into long ropes, forming 1/2-inch thick sticks.
  6. Twist the ropes into candy cane shapes and place them on a powdered sugar-dusted surface to cool completely.
  7. Store in an airtight container once hardened.

Notes

For a stronger flavor, substitute peppermint oil for extract (use sparingly).
