Ingredients

- 2 cups granulated sugar
- 1/2 cup corn syrup
- 1/2 cup water
- 1 teaspoon peppermint extract
- Red food coloring
- Powdered sugar (for dusting)
Instructions
- Prepare your workspace: Clean your counter and dust it lightly with powdered sugar. Gather all ingredients and tools, including a candy thermometer and silicone baking mats.
- Combine sugar, corn syrup, and water in a medium-sized saucepan over medium heat, stirring until the sugar dissolves.
- Allow the mixture to boil without stirring. Attach the candy thermometer, boiling until it reads 300°F (hard crack stage).
- Remove from heat, stir in peppermint extract and food coloring.
- Cool slightly, then butter your hands and stretch the candy into long ropes, forming 1/2-inch thick sticks.
- Twist the ropes into candy cane shapes and place them on a powdered sugar-dusted surface to cool completely.
- Store in an airtight container once hardened.
Notes
For a stronger flavor, substitute peppermint oil for extract (use sparingly).
