Ingredients

  • 4 cups fresh corn kernels (or frozen corn)
  • 4 tablespoons butter
  • 1/4 cup honey
  • 1 cup heavy cream
  • 2 large eggs
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Optional: paprika or cayenne, for added flavor

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh corn, remove the kernels from the cob. If using frozen, allow them to thaw.
  3. In a skillet, melt butter over medium heat. Add chopped onions and sauté until translucent, then add minced garlic and cook for another minute.
  4. In a mixing bowl, whisk together eggs, honey, and heavy cream. Combine with the sautéed onion and garlic.
  5. Fold in the corn and season with salt, pepper, and optional paprika.
  6. Transfer the mixture to a greased casserole dish and smooth out the top.
  7. Bake in the preheated oven for 30 to 35 minutes until the top is golden brown and set.
  8. Let cool slightly for about 10 minutes before serving.

Notes

Top with shredded cheese during the last 5 minutes of baking for a cheesy crust.
