Description
Delightful no-bake truffles that combine the warm flavors of gingerbread with creamy white chocolate, perfect for the holiday season.
Ingredients
Scale
- 2 cups crushed gingerbread cookies (or vanilla wafers)
- 8 oz cream cheese, softened (or mascarpone cheese)
- 1 cup white chocolate, melted (or dairy-free white chocolate)
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp vanilla extract (or almond extract)
- Coatings: crushed nuts, sprinkles, or additional gingerbread crumbs
Instructions
- In a large mixing bowl, combine the crushed gingerbread cookies and soft cream cheese until well-combined. Mix in the spices and vanilla.
- Use a small ice cream scoop or your hands to form bite-sized balls and place on a parchment-lined baking sheet.
- Refrigerate the truffles for about 30 minutes to help them hold their shape.
- Meanwhile, melt the white chocolate in a microwave-safe bowl, heating in 30-second increments until smooth.
- Dip each chilled truffle in the melted white chocolate, ensuring they are fully coated.
- Roll the wet truffles in your choice of coatings before the chocolate sets.
- Return the coated truffles to the baking sheet and allow them to set at room temperature or refrigerate until the chocolate hardens.
Notes
Using fresh spices enhances the flavor significantly. Make sure your cream cheese is soft for easy mixing.
