- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 2 large eggs
- 1 cup breadcrumbs
- 1/4 cup fresh parsley or thyme, chopped
- 1 medium onion, sautéed, finely chopped
- Salt and pepper to taste
- 1 tablespoon Worcestershire sauce (optional)
- 1 tablespoon melted butter or olive oil (for drizzling)
Instructions
- Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
- In a skillet over medium heat, sauté finely chopped onions and garlic until softened and aromatic, about 3-4 minutes. Let cool slightly.
- In a large mixing bowl, combine ground chicken, sautéed onion and garlic, eggs, breadcrumbs, grated Parmesan, fresh herbs, salt, and pepper.
- Gently mix until all ingredients are just combined—don’t overwork it to keep the meatloaf tender.
- Shape the mixture into a loaf and place it in the prepared pan. Drizzle some melted butter or olive oil on top for extra moisture and flavor.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Rest for 10 minutes before slicing to retain juiciness.
- Serve warm, drizzled with garlicky butter from the pan.
