  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/4 cup fresh parsley or thyme, chopped
  • 1 medium onion, sautéed, finely chopped
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire sauce (optional)
  • 1 tablespoon melted butter or olive oil (for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  2. In a skillet over medium heat, sauté finely chopped onions and garlic until softened and aromatic, about 3-4 minutes. Let cool slightly.
  3. In a large mixing bowl, combine ground chicken, sautéed onion and garlic, eggs, breadcrumbs, grated Parmesan, fresh herbs, salt, and pepper.
  4. Gently mix until all ingredients are just combined—don’t overwork it to keep the meatloaf tender.
  5. Shape the mixture into a loaf and place it in the prepared pan. Drizzle some melted butter or olive oil on top for extra moisture and flavor.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Rest for 10 minutes before slicing to retain juiciness.
  7. Serve warm, drizzled with garlicky butter from the pan.
