Description

A refreshing appetizer featuring creamy feta and crunchy cucumbers, perfect for outdoor gatherings.


Ingredients

Scale
  • 2 large cucumbers, sliced into rounds or spears
  • 8 oz high-quality feta cheese, cubed or crumbled
  • 2 tbsp extra virgin olive oil
  • Fresh herbs (dill or mint), for garnish
  • Juice of 1 lemon
  • Salt and freshly cracked black pepper, to taste
  • Wooden skewers

Instructions

  1. Prepare the cucumbers by washing and slicing them.
  2. If using block feta, cut it into cubes.
  3. Soak wooden skewers in water for 30 minutes to prevent burning.
  4. Assemble skewers by alternating cucumber pieces and feta.
  5. Drizzle olive oil over the skewers and sprinkle with salt and pepper.
  6. Finish with lemon juice and fresh herbs.
  7. Optionally, grill skewers for 2-3 minutes on each side for a smoky flavor.

Notes

Serve fresh as an appetizer or light snack. Pairs well with white wine or lemonade.
