Ingredients

- 2 large cucumbers, sliced into rounds or spears
- 8 oz high-quality feta cheese, cubed or crumbled
- 2 tbsp extra virgin olive oil
- Fresh herbs (dill or mint), for garnish
- Juice of 1 lemon
- Salt and freshly cracked black pepper, to taste
- Wooden skewers
Instructions
- Prepare the cucumbers by washing and slicing them.
- If using block feta, cut it into cubes.
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Assemble skewers by alternating cucumber pieces and feta.
- Drizzle olive oil over the skewers and sprinkle with salt and pepper.
- Finish with lemon juice and fresh herbs.
- Optionally, grill skewers for 2-3 minutes on each side for a smoky flavor.
Notes
Serve fresh as an appetizer or light snack. Pairs well with white wine or lemonade.
