Description

A vibrant and refreshing slaw that combines crispy cabbage, colorful carrots, and a tangy peanut dressing, perfect for any gathering.

Ingredients

Scale
  • 1 small green cabbage, shredded
  • 2 cups carrots, grated or julienned
  • 4 green onions, chopped
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 2 tablespoons sesame seeds (for garnishing)

Instructions

  1. Prepare the vegetables: Wash and dry the cabbage, then cut it into thin strips. Grate or julienne the carrots and chop the green onions.
  2. Make the dressing: In a bowl, combine peanut butter, soy sauce, rice vinegar, and honey. Whisk until smooth, adding water if too thick.
  3. Combine: In a large mixing bowl, toss the cabbage, carrots, and green onions with the dressing until evenly coated.
  4. Chill: Let the slaw sit in the fridge for at least 30 minutes to allow flavors to meld.
  5. Serve: Sprinkle with sesame seeds just before serving and toss again.

Notes

For a spicy kick, add a dash of sriracha to the dressing. Store leftovers in an airtight container in the refrigerator for up to 2–3 days.
