- 1 small green cabbage, shredded
- 2 cups carrots, grated or julienned
- 4 green onions, chopped
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame oil
- 2 tablespoons sesame seeds (for garnishing)
Instructions
- Prepare the vegetables: Wash and dry the cabbage, then cut it into thin strips. Grate or julienne the carrots and chop the green onions.
- Make the dressing: In a bowl, combine peanut butter, soy sauce, rice vinegar, and honey. Whisk until smooth, adding water if too thick.
- Combine: In a large mixing bowl, toss the cabbage, carrots, and green onions with the dressing until evenly coated.
- Chill: Let the slaw sit in the fridge for at least 30 minutes to allow flavors to meld.
- Serve: Sprinkle with sesame seeds just before serving and toss again.
Notes
For a spicy kick, add a dash of sriracha to the dressing. Store leftovers in an airtight container in the refrigerator for up to 2–3 days.
