- 1 cup orzo
- 1 medium butternut squash, peeled, seeded, and cubed
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh herbs (thyme or sage), for garnish
- Lemon juice, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the butternut squash cubes with olive oil, salt, pepper, and herbs, then roast for 25-30 minutes until golden and tender.
- Cook orzo in salted boiling water according to package instructions until al dente; drain and set aside.
- In a skillet, heat olive oil and sauté minced garlic until fragrant, about 1 minute.
- Combine the cooked orzo, roasted squash, and fresh spinach in the skillet, then add heavy cream and vegetable broth; stir to combine.
- Add Parmesan cheese and stir until melted. Season with salt, pepper, and lemon juice.
- Serve garnished with fresh herbs and enjoy!
Notes
For a lighter version, you can use half-and-half or coconut milk instead of heavy cream. Make sure to adjust seasoning to taste.
