Ingredients

  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh herbs (thyme or sage), for garnish
  • Lemon juice, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the butternut squash cubes with olive oil, salt, pepper, and herbs, then roast for 25-30 minutes until golden and tender.
  3. Cook orzo in salted boiling water according to package instructions until al dente; drain and set aside.
  4. In a skillet, heat olive oil and sauté minced garlic until fragrant, about 1 minute.
  5. Combine the cooked orzo, roasted squash, and fresh spinach in the skillet, then add heavy cream and vegetable broth; stir to combine.
  6. Add Parmesan cheese and stir until melted. Season with salt, pepper, and lemon juice.
  7. Serve garnished with fresh herbs and enjoy!

Notes

For a lighter version, you can use half-and-half or coconut milk instead of heavy cream. Make sure to adjust seasoning to taste.
