Description

A hearty and comforting chicken mushroom soup that brings warmth and connection to the family table.


Ingredients

  • 1 lb chicken breast or thighs, boneless
  • 8 oz fresh mushrooms (button, cremini, or shiitake)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp fresh thyme
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup cream (optional)
  • Salt and pepper to taste
  • A splash of lemon juice
  • Olive oil for cooking

Instructions

  1. Slice the chicken into bite-sized pieces and season with salt and pepper.
  2. Heat olive oil in a large pot over medium heat, then cook the chicken until golden brown, about 5-7 minutes. Remove and set aside.
  3. Add more oil if needed, then sauté onions and garlic for 2-3 minutes until fragrant.
  4. Stir in sliced mushrooms and sauté until they release moisture, about 5 minutes.
  5. Pour in the chicken broth and bring to a gentle simmer. Nestle the cooked chicken back in and simmer for 15-20 minutes.
  6. Add diced carrots and celery in the last 5 minutes of cooking.
  7. Before serving, stir in fresh herbs and a splash of lemon juice. Adjust seasoning as needed. If using cream, swirl it in just before serving.

Notes

This soup can be made vegetarian by substituting chicken with chickpeas or tofu, and using vegetable broth instead.
