Ingredients

  • 2 cups cherries, pitted and chopped
  • 1/2 cup brandy (or cherry juice for non-alcoholic)
  • 2 cups heavy cream
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet or dark chocolate, chopped into chunks

Instructions

  1. In a mixing bowl, combine the chopped cherries and brandy. Let sit for about an hour.
  2. In a separate bowl, whisk together the heavy cream, sweetened condensed milk, and vanilla extract. Chill this mixture for at least two hours.
  3. Combine the cherry and cream mixtures gently, then fold in the chocolate chunks.
  4. Pour into your ice cream maker and churn according to manufacturer’s instructions (about 20-30 minutes).
  5. Transfer to an airtight container and freeze for at least four hours before serving.

Notes

For a lighter version, use half-and-half instead of heavy cream. Remember to check the texture of the ice cream; it should be thick and creamy before stopping the churn.
