Ingredients

- 1 lb Ground Beef (or turkey/chicken)
- 2 cups Diced Tomatoes (canned or fresh)
- 1 can Black Beans, drained and rinsed
- 1 can Kidney Beans, drained and rinsed
- 1–2 Bell Peppers, chopped
- 1 Onion, chopped
- 3 cups Chicken or Beef Stock (or vegetable stock for vegetarian)
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Garlic Powder
- Salt to taste
- 1 cup Corn (frozen or canned)
Instructions
- In a large pot, heat a drizzle of olive oil and sauté chopped onions and bell peppers until softened.
- Add ground beef and cook until browned, breaking it into crumbles. Season with salt and chili powder.
- Stir in diced tomatoes and beans.
- Pour in stock and mix in remaining spices. Let simmer for 15-20 minutes.
- Add corn and additional herbs before serving, adjusting seasoning as necessary.
Notes
Consider adding toppings like shredded cheese, diced avocado, or crispy tortilla strips for added flavor.
