Description

A hearty and flavorful Taco Soup that’s perfect for family gatherings or cozy weeknight dinners.


Ingredients

  • 1 lb Ground Beef (or turkey/chicken)
  • 2 cups Diced Tomatoes (canned or fresh)
  • 1 can Black Beans, drained and rinsed
  • 1 can Kidney Beans, drained and rinsed
  • 12 Bell Peppers, chopped
  • 1 Onion, chopped
  • 3 cups Chicken or Beef Stock (or vegetable stock for vegetarian)
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • Salt to taste
  • 1 cup Corn (frozen or canned)

Instructions

  1. In a large pot, heat a drizzle of olive oil and sauté chopped onions and bell peppers until softened.
  2. Add ground beef and cook until browned, breaking it into crumbles. Season with salt and chili powder.
  3. Stir in diced tomatoes and beans.
  4. Pour in stock and mix in remaining spices. Let simmer for 15-20 minutes.
  5. Add corn and additional herbs before serving, adjusting seasoning as necessary.

Notes

Consider adding toppings like shredded cheese, diced avocado, or crispy tortilla strips for added flavor.
