  • 1 lb boneless chicken (breast or thighs), cut into bite-sized pieces
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 tbsp soy sauce
  • 2 tbsp honey
  • 12 fresh chili or chili paste, to taste
  • Fresh herbs (Thai basil and cilantro), for garnish
  • 1 lime, for squeezing

Instructions

  1. Prep your chicken: Cut the boneless chicken into bite-sized pieces.
  2. Marinate: In a bowl, combine chicken pieces, soy sauce, honey, and minced garlic and ginger. Let it marinate for at least 30 minutes.
  3. Sauté aromatics: In a large skillet over medium heat, add a tablespoon of oil and sauté minced ginger and garlic for about a minute.
  4. Cook the chicken: Add the marinated chicken to the skillet, brown without stirring for a few minutes.
  5. Add coconut milk and chili: Pour in the coconut milk and add fresh chili or chili paste. Simmer for about 10-15 minutes.
  6. Finish it off: Squeeze lime juice just before serving and sprinkle with fresh herbs.
  7. Serve hot over jasmine rice or noodles, garnished with more herbs.
