- 1 lb boneless chicken (breast or thighs), cut into bite-sized pieces
- 1 cup coconut milk
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1 tbsp soy sauce
- 2 tbsp honey
- 1–2 fresh chili or chili paste, to taste
- Fresh herbs (Thai basil and cilantro), for garnish
- 1 lime, for squeezing
Instructions
- Prep your chicken: Cut the boneless chicken into bite-sized pieces.
- Marinate: In a bowl, combine chicken pieces, soy sauce, honey, and minced garlic and ginger. Let it marinate for at least 30 minutes.
- Sauté aromatics: In a large skillet over medium heat, add a tablespoon of oil and sauté minced ginger and garlic for about a minute.
- Cook the chicken: Add the marinated chicken to the skillet, brown without stirring for a few minutes.
- Add coconut milk and chili: Pour in the coconut milk and add fresh chili or chili paste. Simmer for about 10-15 minutes.
- Finish it off: Squeeze lime juice just before serving and sprinkle with fresh herbs.
- Serve hot over jasmine rice or noodles, garnished with more herbs.
