- 4 large Russet or Yukon Gold potatoes, diced
- 1 lb Andouille sausage, sliced (or turkey/veggie sausage)
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1–2 bell peppers, diced (yellow or green)
- 2 tablespoons Cajun seasoning
- 4 cups chicken broth (or vegetable broth)
- 1 cup heavy cream
- 2 green onions, sliced (for garnish)
Instructions
- Prep your veggies by dicing the potatoes, onions, and bell peppers into even chunks.
- Sauté the garlic and onions in a skillet with a little oil until softened and fragrant.
- Combine the sautéed mixture in the slow cooker with the diced potatoes, sausage, and bell peppers.
- Add the chicken or vegetable broth and Cajun seasoning, then stir well.
- Cover and cook on low for 6-8 hours or high for about 3-4 hours.
- About 30 minutes before serving, stir in the cream.
- Ladle the soup into bowls and garnish with fresh green onions.
Notes
For a thicker soup, mash some potatoes or blend a portion before serving.
