  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Brown the beef: Heat olive oil in a large pot over medium-high heat. Pat beef dry, season with salt and pepper, and brown in batches. Transfer to a plate.
  2. Sauté the aromatics: In the same pot, add more olive oil if needed. Sauté onions, garlic, and vegetables until onions are translucent (about 5 minutes).
  3. Add the beef back: Return the browned beef and juices to the pot with chopped herbs.
  4. Pour in the cider: Add apple cider and beef broth until meat and veggies are covered. Stir well.
  5. Simmer to perfection: Bring to a boil, then reduce heat and let simmer for 2-2.5 hours until beef is tender, stirring occasionally.
  6. Final touches: Taste and adjust seasoning. For a thicker stew, simmer uncovered for an additional 30 minutes before serving hot.
