- 2 lbs chuck roast, cut into cubes
- 1 cup apple cider
- 2 cups beef broth (low-sodium)
- 2 cups carrots, chopped
- 1 cup onions, chopped
- 2 cups potatoes, diced
- 2 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Brown the beef: Heat olive oil in a large pot over medium-high heat. Pat beef dry, season with salt and pepper, and brown in batches. Transfer to a plate.
- Sauté the aromatics: In the same pot, add more olive oil if needed. Sauté onions, garlic, and vegetables until onions are translucent (about 5 minutes).
- Add the beef back: Return the browned beef and juices to the pot with chopped herbs.
- Pour in the cider: Add apple cider and beef broth until meat and veggies are covered. Stir well.
- Simmer to perfection: Bring to a boil, then reduce heat and let simmer for 2-2.5 hours until beef is tender, stirring occasionally.
- Final touches: Taste and adjust seasoning. For a thicker stew, simmer uncovered for an additional 30 minutes before serving hot.
