Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • Red food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C), and line or grease a muffin tin.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, beat together the sugar, eggs, vegetable oil, buttermilk, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix!
  5. In a small bowl, soften the cream cheese with a little sugar and vanilla to create the filling.
  6. Fill each muffin cup halfway with the red velvet batter, add a scoop of cream cheese filling in the center, then top each with more batter until each cup is about three-quarters full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the muffin (not the filling) comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack.

Notes

For substitutions, use vinegar or lemon juice to sour regular milk instead of buttermilk. Softening the cream cheese before mixing is crucial for a smooth filling.
