- 1 cup buttermilk
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened

Instructions
- Preheat your oven to 350°F (175°C), and line or grease a muffin tin.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, beat together the sugar, eggs, vegetable oil, buttermilk, and vanilla until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix!
- In a small bowl, soften the cream cheese with a little sugar and vanilla to create the filling.
- Fill each muffin cup halfway with the red velvet batter, add a scoop of cream cheese filling in the center, then top each with more batter until each cup is about three-quarters full.
- Bake for 18-20 minutes or until a toothpick inserted into the muffin (not the filling) comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack.
Notes
For substitutions, use vinegar or lemon juice to sour regular milk instead of buttermilk. Softening the cream cheese before mixing is crucial for a smooth filling.
