  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 8 oz semisweet chocolate
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a large mixing bowl, combine pumpkin puree, sugar, eggs, and vanilla extract. Whisk until smooth.
  4. In another bowl, mix flour, baking powder, cinnamon, nutmeg, and salt. Fold into the wet ingredients.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes. Let it cool completely.
  6. Melt the semisweet chocolate using a double boiler or microwave; let cool slightly.
  7. Whip the cream until soft peaks form, then gently fold in the melted chocolate.
  8. Layer mousse over the cooled cake and refrigerate for at least 2 hours.
  9. Decorate with whipped cream, chocolate shavings, or nuts if desired. Serve and enjoy!

Notes
