- 1 cup pumpkin puree
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
- 8 oz semisweet chocolate
- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large mixing bowl, combine pumpkin puree, sugar, eggs, and vanilla extract. Whisk until smooth.
- In another bowl, mix flour, baking powder, cinnamon, nutmeg, and salt. Fold into the wet ingredients.
- Pour the batter into the prepared pan and bake for 25-30 minutes. Let it cool completely.
- Melt the semisweet chocolate using a double boiler or microwave; let cool slightly.
- Whip the cream until soft peaks form, then gently fold in the melted chocolate.
- Layer mousse over the cooled cake and refrigerate for at least 2 hours.
- Decorate with whipped cream, chocolate shavings, or nuts if desired. Serve and enjoy!
Notes
For an extra twist, try adding a sprinkle of toasted pecans or serve with a scoop of vanilla ice cream.
