Ingredients

  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 tablespoon baking powder

  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a large bowl, combine rolled oats, pumpkin puree, milk, and beaten eggs.
  3. Add maple syrup or honey and mix well.
  4. Sprinkle in baking powder, cinnamon, nutmeg, and salt; stir until combined.
  5. Pour the mixture into the greased pan and smooth the top.
  6. Bake for 25-30 minutes, until set and slightly golden on top.
  7. Let cool for a few minutes before serving warm with favorite toppings.

Notes
