Ingredients

  • 12 oz pappardelle (fresh or dried)
  • 2 tbsp Calabrian chili paste
  • 14 oz Italian sausage (sweet or spicy)
  • 4 cloves garlic, minced
  • 3 tbsp extra-virgin olive oil
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the pappardelle according to package instructions until al dente, reserving a cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat, then sauté minced garlic until fragrant.
  3. Add the Italian sausage and cook until browned and fully cooked, draining excess fat if needed.
  4. Stir in Calabrian chili paste and cooked for 1 minute before adding crushed tomatoes.
  5. Simmer sauce for 10 minutes, adding reserved pasta water if too thick.
  6. Fold in cooked pappardelle, tossing to coat evenly and cook for 2-3 minutes.
  7. Serve hot, topped with freshly grated Parmesan and herbs.

Notes

For a vegetarian option, omit the sausage and double the vegetables such as mushrooms, zucchini, or bell peppers.
