- 12 oz pappardelle (fresh or dried)
- 2 tbsp Calabrian chili paste
- 14 oz Italian sausage (sweet or spicy)
- 4 cloves garlic, minced
- 3 tbsp extra-virgin olive oil
- 1 can (28 oz) crushed tomatoes
- 1/2 cup freshly grated Parmesan cheese
- Fresh basil or parsley, for garnish
Instructions
- Cook the pappardelle according to package instructions until al dente, reserving a cup of pasta water.
- In a large skillet, heat olive oil over medium heat, then sauté minced garlic until fragrant.
- Add the Italian sausage and cook until browned and fully cooked, draining excess fat if needed.
- Stir in Calabrian chili paste and cooked for 1 minute before adding crushed tomatoes.
- Simmer sauce for 10 minutes, adding reserved pasta water if too thick.
- Fold in cooked pappardelle, tossing to coat evenly and cook for 2-3 minutes.
- Serve hot, topped with freshly grated Parmesan and herbs.
Notes
For a vegetarian option, omit the sausage and double the vegetables such as mushrooms, zucchini, or bell peppers.
