Ingredients

- 8 ounces spaghetti (whole grain or gluten-free)
- 1 can (15 ounces) diced tomatoes
- 8 ounces mushrooms (cremini or button)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable or chicken broth (low-sodium)
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- In a pot, heat olive oil over medium heat. Add chopped onions and minced garlic, and sauté until fragrant (2-3 minutes).
- Add mushrooms and cook until browned and moisture is released.
- Stir in diced tomatoes with their juices; scrape any bits from the bottom of the pot.
- Add spaghetti and broth; bring to a gentle boil, stirring to immerse the spaghetti.
- Reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
- Once spaghetti is tender, remove from heat. Stir in fresh herbs and Parmesan, and adjust seasoning.
- Ladle into bowls and garnish with more herbs and cheese as desired.
Notes
Can be customized with different vegetables or herbs; serve with a light salad or garlic bread.
