Description

A comforting One-Pot Spaghetti dish that brings family together with its hearty flavors and simplicity.


Ingredients

  • 8 ounces spaghetti (whole grain or gluten-free)
  • 1 can (15 ounces) diced tomatoes
  • 8 ounces mushrooms (cremini or button)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable or chicken broth (low-sodium)
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In a pot, heat olive oil over medium heat. Add chopped onions and minced garlic, and sauté until fragrant (2-3 minutes).
  2. Add mushrooms and cook until browned and moisture is released.
  3. Stir in diced tomatoes with their juices; scrape any bits from the bottom of the pot.
  4. Add spaghetti and broth; bring to a gentle boil, stirring to immerse the spaghetti.
  5. Reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
  6. Once spaghetti is tender, remove from heat. Stir in fresh herbs and Parmesan, and adjust seasoning.
  7. Ladle into bowls and garnish with more herbs and cheese as desired.

Notes

Can be customized with different vegetables or herbs; serve with a light salad or garlic bread.
